Sayulita picks the best aguachile as part of its identity

As the state’s youngest municipality, Baha de Banderas is seeking to develop icons that represent the community because there aren’t enough local characteristics there yet.

The Directorate of Tourism, under the direction of Jorge Garcia, has organized a few gastronomic days to identify the most delicious and distinctive foods of each region, and this past weekend it was Sayulita’s turn.

The gastronomic festival, which featured locals and businesspeople, featured the aguachile as its most iconic and delectable dish.

The official explained, “Last week, we held the second iteration of the gastronomic festival honoring aguachile in Sayulita, with 12 representatives from Sayulita presenting their 12 aguachiles. There was a competition, and we are also doing this to find our culinary identity.

The winner in this case was Xochi, whose aguachile was deemed the best by the locals themselves and will be used to advertise the tourist destination in the local Banderas Bay markets. The next stop on the Directorate of Tourism’s quest to discover each locality’s distinct cuisine will be San Pancho.
